Cafe de Olla

An mixture of ground coffee, cinnamon, and piloncillo (Mexican dark brown sugar).

Ingredients

  • 8 cups water
  • 4 oz ground coffee
  • 4 oz piloncillo (or dark brown sugar)
  • 2 cinnamon sticks
  • 3 cloves, whole
  • 1 square of semi-sweet chocolate

Directions

  1. Boil water in a saucepan, then add cinnamon, cloves, sugar and chocolate.
  2. When the mixture comes to a boil, skim off foam.
  3. Reduce the heat to a simmer, then add coffee.
  4. Steep for 5 minutes then serve.

Alpine Cafe

Ingredients

  • 2 tbs instant coffee
  • 2 tbs brown sugar
  • 1 tbs vanilla extract
  • 1 tsp water
  • 1 1/2 cup boiling water

Directions

  1. Split coffee and vanilla between 2 mugs
  2. Dissolve the sugar in 1 tsp water, and heat in a saucepan to boiling
  3. Mix in the larger portion of hot water, then pour into the two mugs
  4. Stir well and serve
  5. Serves 2

Espresso Sorbet

Ingredients

  • 6 tbs espresso ground coffee
  • 4 tbs brown sugar
  • 1 quart boiling water
  • 1 cup whipped cream
  • Cocoa powder

Directions

  1. In a bowl, combine the ground coffee and brown sugar.
  2. Add boiling water and mix
  3. Let steep until water has cooled, then strain out coffee grounds
  4. Pour the mixture into a shallow pan or dish, and freeze for at least 3 hours
  5. A deeper container will take longer to freeze through
  6. When the sorbet is nearly frozen (still scoopable), serve into tall chilled glasses and top with whipped cream and a sprinkle of cocoa

Frosty Miss

Ingredients

  • 1 cup coffee
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 tsp almond extract

Directions

  1. Dissolve sugars in coffee while it is hot
  2. Let cool, and add almond
  3. Pour into a metal tray and freeze until nearly solid
  4. Beat well, then freeze again until it reaches a sherbet texture
  5. Serve topped with whipped cream
  6. Serves 4

Brazilian Coffee Cookies

Ingredients

  • 1/3 cup shortening
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon milk
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 2 tablespoons instant coffee powder

Directions

  1. Preheat oven to 400 degrees F (205 degrees C). Line baking sheets with parchment paper
  2. Beat the shortening, brown sugar, white sugar, egg, vanilla and milk until fluffy
  3. Stir the flour, salt, baking soda, baking powder and instant coffee. Add to sugar mixture and mix thoroughly
  4. Shape dough in 1 inch balls. If it’s too soft, chill it for a while. Place balls 2 inches apart on prepared baking sheets. Flatten to 1/8 inch thickness with fork or glass dipped in sugar
  5. Bake at 400 degrees F (205 degrees CV) for 8 to 10 minutes until lightly browned.
